Delicious Apple Caramel Fudge Cake: Quarantine Time Cooking with Daisy Fatim

This was an experimental no oven recipe turned that i baked on my stove top...😃 well there’s not much back story to tell about it..i just happens to have the habit of experimenting with edible stuff lying around in my pantry and fridge..and this time it just happened to be apples and caramel sauce..
(i had actually baked this cake for my pregnant sister in law but my brother ended up eating the whole thing 😂 so i guess that definitely says something about how good it tastes...!!)
So here goes the recipe for this super delicious and fudgy cake and i hope you try it and enjoy it as much as we did..!! 😃
Ingredients:- Apples-4(small-ooty apples or green apples)-chopped into small pieces..(1cup) Brown Sugar-3/4cup White sugar-1/2cup Caramel sauce-1/4 cup Raisins-1/4cup Eggs-2 Baking soda-1tspn Baking powder-tspn Butter-100gms Cinnamon powder-1tspn Water-1/4cup Vanilla extract-2tspns
(No oven option-Preheat your saucepan on a low flame with the lid on for 8-10mins..)
Preheat your oven for 15mins at 180degrees..
In a deep bottom saucepan add in the apples with water leave on low flame with a lid on for 10mins..once they start to cook add in cinnamon and mix well to this add in 1/2cup brown sugar and let it cook again..the sugar should melt and apples should turn into an almost mush like texture.. now set this aside to cool..this can also be done a day ahead and left in the fridge..
In a bowl whisk the eggs sugar and butter using a electric whisk or hand whisk for 2-3mins.add in the vanilla extract and mix well.sift the dry ingredients into the wet ingredients and combine well using a thin edged metal spoon..add the caramelised apples..coat the raisins in 1/2tspn flour and add them into the batter.. this is to prevent them from sinking to the bottom of the batter..mix until well combined.. Transfer 1/4 of the batter into a buttered tip lined with parchment or butter paper..add a few dollops of caramel sauce on the batter and layer it with 1/4 of the batter and continue until done..
Place the tin into the sauce pan or oven and bake it for 50-55mins or until the sides have firmed and centre isn’t jiggly anymore.. let it cool down for a 15-20mins then slice into 2 inch squares and enjoy..!! ?
